Zucchini With Beef (Hobakmuchim)

A friend gave us a recipe for Hobakmuchim (Zucchini with Beef). It was very easy and very tasty.
INGREDIENTS
- 1 scallion, sliced thin
- 2 garlic cloves, chopped
- 1 1/2 TBS soy sauce
- 1 inch piece of fresh ginger, chopped
- 1 TBS sesame oil
- pepper to taste
- 1 cup ground beef
- 4 small zucchini-cut 1/4 inch diagonal slices
- 2 TBS vegetable oil
- 2 scallions
- 1 TBS sugar
- 1 TBS soy sauce
- 1 tsp Korean chili powder (1/2 cayenne- 1/2 paprika) [Jacq's
note: I highly recommend just using the Korean red pepper/chili powder
instead of the cayenne-paprika combo for more authentic flavor.]

adds: Easy to find in Korean/asian markets. Comes pre-toasted in
shakable canisters and cheaper than at regular grocery store.]
DIRECTIONS
1.Mix marinade ingredients (first 6 ingreds: scallion through
pepper to taste.) Marinate uncooked beef in marinade for 30 minutes.
2.Put zucchini in colander and sprinkle with salt. Let sit for 30 minutes. Rinse zucchini and dry.
3.Heat veg oil over medium high heat. Add beef and marinade. Cook until done.
4.Stir in zucchini, then add remaining ingredients. Cook for 2 minutes.
Lower heat and cook additional minute or until zucchini is tender.
Sprinkle with toasted sesame seeds.
Serve with rice.
