Zazu Nutter Butter Cookies

This recipe is from a local restaurant. These are SOOOOOO good!!
INGREDIENTS
- 1 1/4 c. Creamy peanut butter
- 8T soft butter
- 3/4 c. sugar
- 1/4 c. Brown sugar
- 1 egg
- 1 tsp. vanilla
- 1 1/3 c. Flour
- 1/2 tsp. baking soda
- 1/2 tsp. kosher salt
Frosting
- 1 c. creamy peanut butter
- 1/2 c. powdered sugar
The Dip
- 8 oz. bittersweet chocolate melted
- 1 tsp. shortening
DIRECTIONS
-Combine peanut butter, butter and both sugars in large bowl of electric mixer and cream together.
-Add the egg and vanilla and mix till combined.
-Sift together the flour, baking soda and salt.
-Add dry ingredients to peanut butter mixture till combined.
-Refrigerate for at least an hour.
-Preheat oven to 350.
-Roll out dough to 1/8 inch and cut with symmetrically shaped cutters.
-Bake on cookie sheet lined with parchment or silpat, 8-10 minutes or until the edges start to brown.
-let cool on rack.
Make the frosting and assemble cookies
-mix peanut butter and confectioners sugar till combined.
-When cookies are cool, spread frosting on the back of one cookie and
join to the back side of another cookie to make sandwiches.
-Melt chocolate and shortening in bowl over simmering water.
-Dip 1/2 of each cookie in chocolate and set to harden on a
foil-covered baking sheet. You may hasten this process by placing the
sheet of cookies in the freezer.
