White Chicken Chili

YUM!!! I have THE BEST white chicken chili recipe... AND I happen to have it handy as I'm getting ready to make some during naptime! (Which is NOW but here I am!)

INGREDIENTS

  • 1lb. cooked chicken (days like today when I'm not in the mood for cooking chicken I use the chicken in a can!)
  • 1-3 cloves garlic
  • 1T oil
  • 2 cans Northern beans
  • 1 16oz. can chicken broth
  • 8oz. can green chiles
  • 1 medium onion
  • 1tsp salt
  • 1 tsp cumin
  • 1tsp oregano
  • 1/2tsp pepper
  • 1c. sour cream
  • 1/2c. whipping cream

DIRECTIONS

Saute onion and garlic in oil
Add green chiles

Add beans, broth, and spices
Add chicken and simmer for 30min. on low

Add sour cream, stirring constantly until melted
Add whipping cream

Cook over med heat for 5-10 minutes.

*I NEVER follow this recipe exactly as it reads. I tend to add more beans and more green chiles. Also, I make stock broth from turkeys, etc. so I just thaw a little to pour in... you can make it any consistency you want!

I made it last night and garnished it with fresh cilantro, cheese and green onions. It was amazing! We are having it for quick left-overs before we go Trick or Treating tonight. I am adding it to "my favorites". THANK YOU!

I’m sitting here with a small bowl of it as I type. I made it for tomorrow, but of course it has to be tasted (and tasted again for good measure).

I love the fact it is so easy to customize! I added a bit more chicken, less beans (DH doesn’t like “beany” chili) and also did the sharp cheddar / cilantro combination. I added a few shots of green Tabasco sauce and... wow.

The cornbread muffins are in the oven… now there is nothing to do but watch the Weather Channel track the progress of Noel.

I can weather anything- I’ve got chili and a propane burner. ;-)

Love the white chili.....We've been making that for years, but somehow lots of folks don't know about the recipe and just rave over it when we make it....I love EASY recipes that taste GREAT!
