Vegetable Croquettes (Cha Soh Juhn)

One of our favorites:

INGREDIENTS

  • 1 large potato
  • 2 carrots
  • 1 large onion
  • 1 clove garlic, crushed
  • 2 eggs, lightly beaten
  • 1/4 cup water
  • 1 TBLS soy sauce
  • 1/2 tsp salt
  • 3/4 cup flour 

DIRECTIONS

Grate the potato, carrots, onion & garlic in a food processor or with hand grater. Mix together. Combine eggs, water, soy sauce & salt together until thoroughly blended, then gradually fold in the flour until the mixture forms a smooth batter. Stir in the vegetable mixture until it's well blended. Heat oil in frying pan. When hot, carefully arrange the mixture in heaping TBS & fry until browned on one side. Turn & brown other side. Drain on paper towels.

Dipping Sauce good with the Cha Soh Juhn:

1 TBLS soy sauce
1/4 tsp vinegar
1/8 tsp sesame oil
1 tsp sugar
1 TBLS sesame salt
enough water to dilute to your preference

(I've omitted the sesame salt on this and added actual sesame seeds... still great!)
