Twice Baked Potatoes

Oooo... I thought of another favorite that I freeze ahead often. Twice baked potatoes! I'll actually be making these today as the store had a big bag of russet potatoes on sale for 1.49.

Bake potatoes in the oven. When done, split in half, scoop out the potato leaving the skin intact. Put the potato center into a large bowl, add butter, milk, sour cream - whatever you would like! (I also sometimes add cooked-until-soft squash or turnips - to hide the veggies in the potato!). Put this mixture back into the potato skins. Place in freezer bag in meal-size portions and freeze! (you can also freeze on a tray then pack in a freezer bag. This keeps the potatos from sticking together when freezing and makes for easy removal).

To use: place potato halves on a tray and heat in oven until thaw or thaw/heat in microwave. Add cheese, bbq chicken, diced veggies - whatever you want as a topping!
