Tortellini Soup

This is SO easy and SO yummy!! Whenever I make this everyone wants the recipe: **edited with additional tips**
INGREDIENTS
- 1 TBS. Olive Oil
- 4 cloves minced garlic
- 1 can (49oz) Chicken Broth
- 1- 9oz. pkg. fresh tortellini (any kind ... found in deli section)
- 1 can (14.5oz) diced tomatoes (sometimes I get Italian style)
- 1 bunch fresh spinach
- 6 fresh basil leaves, chopped
- Fresh grated Parmesan Cheese
DIRECTIONS
Saute garlic in olive oil until browned. Stir in broth and
tortellini and bring to a boil. Simmer until tortellini is just tender
... about 5 minutes.
Add tomatoes, spinach, and basil. Simmer 2 minutes.
Serve in soup bowls and top with grated Parmesan Cheese. Is wonderful with a rustic bread.
I usually make a larger portion and add a lot more spinach. My kids devour it and get in tons of dark green veggies.
** You can add more broth if needed. You do not drain the tomatoes ...
the liquid from the tomatoes adds to the flavor and the broth **
**Also, if there are left overs the tortellini swells up and absorbs a
lot of the soup base ... it becomes not so soupy as a left over**
