Tom's Eggs

My stepdad has the yummiest way to make eggs with lox (smoked salmon). I recommend if you are new to using lox, buy the Nova lox b/c it isn't as salty as some packaged smoked salmon. (It's still plenty salty though!) I just love this!

eggs
nova lox
onion powder
pepper
Phillip's Seafood seasoning (comes in black metal canister from grocery store w/ red lettering I believe.)
lots of butter or margarine
shredded cheddar
Philadelphia whipped cream cheese w/ chives (make sure it is the whipped kind in the tub, not a stick)

For one person, you fry 2 eggs in plenty of butter and sprinkle generously w/ Phillip's, onion powder and pepper (the Phillips is salty.) Have your lox and cheeses standing by. After you flip your eggs over, top one of them w/ slices of lox, a generous dollop of the cream cheese and then top w/ the other egg. Sprinkle lots of shredded cheddar over the top. Plate it and eat. You can also put the shredded cheddar on top of the cream cheese before you top w/ the othe egg if you prefer.
