Spinach Namul (Sigumchi Namul)

Categories: KoreanVegetablesWorld Cuisine
Contributed by: Barbara ~~no specific source but referenced as a recipe prepared by Friend of Children Everywhere (an adoptive parent support group) for their Asian New Year celebration.

One of our favorites:

INGREDIENTS

  • 1 1/2 lb spinach
  • 1 TBLS chopped scallion
  • 1 TBLS sesame oil
  • 1 TBLS sesame salt
  • 2 tsp - 1 TBLS soy sauce
  • speck black pepper
  • 1/8 tsp chopped garlic
  • salt

DIRECTIONS

Remove roots & separate leaves of spinach. Wash well, cook quickly in deep boiling water. Drain off water and squeeze out. Season with remaining ingredients as needed.

(Note: if you boil too long, you end up with a VERY small amount of spinach! I have made this without the sesame salt and it is still great.)
