Southwest Crockpot Chicken

VERY easy! Great for cold and rainy weather.

INGREDIENTS

  • 2 cans corn (I only use one)
  • 1 can black beans
  • 16 oz chunky salsa
  • chicken breasts
  • cheddar cheese

DIRECTIONS

Mix corn, beans and 1/2 cup salsa in crockpot. Lay chicken on top and pour rest of salsa on top. Cook 3-4 hours. Sprinkle cheese on top and cover for five minutes until melted. 

I serve over brown rice and serve with salad and broccoli.
