Southwest Black Bean-Corn Salad

Someone at a friend's party made this and it was really good! When I made it, I was about bowled over by the strong smell of the heating vinegar. That part isn't pleasant, but the taste afterwards sure is!

INGREDIENTS

  • 1 can black beans
  • 1 can corn
  • 1 ripe avocado, diced (but don't do this until the dressing is cooked and cooled so it doesn't brown.)  Tip: Ripe avocado=darker, not bright green.
  • 1/2 red bell pepper, diced
  • fresh cilantro
    Dressing:
  • 1/4 C cider vinegar
  • 1/4 C balsalmic vinegar
  • 1 1/2 t brown sugar
  • 1/2 t cumin
  • 1 clove minced garlic
  • 1 1/2 t lime juice

DIRECTIONS

1. Boil dressing ingredients 2 minutes for sugar to dissolve. This is when the *strong* odor of the vinegar is overwhelming. Your kitchen will smell like it for a while.
2. Let cool a bit then add it to everything else in a bowl and chill.
