Roasted Broccoli

Categories: Vegetables

I'm sure many people have been roasting broccoli for years, but I just started preparing it this way a few months ago, and OH MY! I LOVE IT! Claire does, too.

I just cut up a head of brocolli, mostly using the florets and a bit of the stalks, mix them up with a bit less than 1/4 cup of olive oil, sprinkle on some onion powder, garlic powder, pepper, and salt. Roast at 400 degrees for 10 minutes.

I'm absolutely addicted! It's great with rice pilaf. Guess what's cooking right now for dinner! ;-)

[Jacqueline added: I tried this recipe and found that, perhaps as a result of my own oven, the broccoli was completely raw after 10 minutes. I had to cook it about 17 minutes I think and it was still somewhat crisp.]
