Ritz Mint 'Cookies'

This is a good one and easy if you have to do lots of them.

INGREDIENTS

  • Ritz crackers
  • mint candy disks
  • chocolate candy disks

DIRECTIONS

Melt mint candy in a double boiler*. Dip Ritz crackers and set on wax paper to harden. Melt chocolate candy disks in double boiler. Dip mint coated crackers in chocolate. Let harden on wax paper.

These are soooo good, it's a great salty/sweet combo.
* If you don't have a double boiler, you don't need to buy one. Just take a metal bowl (or glass that is oven proof) and put it over a pot of boiling water. Make sure your bowl on top is slightly smaller than the pot, you don't want the bowl to touch the bottom of the pot and you want to have room for the water.

I make a variation of those mint cookies every year and they are so awesome- just like the girlscout ones where you could eat a sleeve at a time without blinking. I just melt nestle chocolate chips over low heat in a regular sauce pan. Just keep stirring so it doesn't stick. Add some mint extract to the chocolate to taste. Dip the Ritz crackers in chocolate until fully covered. Take out and put on wax paper. Throw in freezer for a couple of minutes to set the chocolate and eat away!! It is so good and easy!!
