Rice Pizza (gluten-free)
Here is a recipe that has been in my family for years. It works great
for us as a replacement for pizza and is cheaper that the mixes
[gluten-free mixes~~Jacq]. As a pizza lover, my husband was a little
slower to grow to love it. You do need a fork to eat it but is
Preheat oven to 450* and grease a 13 x 9 pan.
3 cups cooked rice
1 cup mozzarella cheese
This makes your crust. After making the rice while it is warm, add the
eggs and cheese. Mix well and spread evenly into the pan. Cook for 20
minutes. Remove from oven and put your sauce, toppings and cheese on,
then heat for another ten minutes or until cheese is melted. (We like
the crust a little thicker so I am not precise when measuring the rice)
Leave for a few minutes then ENJOY!!!!
My kids BEG for this to be on the dinner menu!
