Pumpkin Spice Muffins

I mentioned on another thread that I tried some DELICIOUS
Pumpkin muffins at a Weight Watchers meeting the other day. Well, I
whipped up a batch today, and the kids went BANANAS for them!!!!!! You
can either make up 24 muffins for 1/2 point each or make great big
muffins for a batch of 12 for 1 point each...Here's the best part: It
only has THREE ingredients!!!!!
INGREDIENTS
- 1 Spice Cake Mix (I think I used Duncan Hines)
- 1 Can of Pumpkin
- 2 eggs
DIRECTIONS
Mix together. Bake at 350 degrees for 30 minutes...It's so
delicious and the kids LOVED them. I can just see myself stealing away
some quiet time for a muffin and coffee!!!! YUMMY!

They are very good!! Another way that you can make them is:
Pumpkin Spice Muffins
1 Box Spice Cake Mix
1 Regular Size Can of Pumpkin (15.5 oz)
2/3 cup water
Mix well and put into muffin pans and bake @ 350 for the amount of time posted on the cake box. DELICIOUS!!!!
This is a weight watchers recipe and if you use the large muffin pan
they are 2 points a piece and with the small muffin pan they are 1
point a piece.
My son just loves these muffins and they are good for him!!!!!

I have made these muffins (my recipe is 1 box cake mix, 1 can pumpkin,
1 cup water) using every kind of cake mix out there...my favorite being
the chocolate. You really don't taste the pumpkin and they are so
moist!!!!

I made the pumpkin muffins again with vanilla cake mix since I can't
find the spice cake mix ANYWHERE! This time I added a sprinkle of
nutmeg and some cinnamon in the mix and oh my gosh are they
delicious!!!!! I am so not a baker and I love to make these since they
are so easy and good!

I used carrot cake mix - really yummy! I'm going to try Chocolate, that sounds good.

I did make them with chocolate cake mix, and it is yummy, too. You
can't even taste the pumpkin, and you get the full flavor of the
chocolate.
