Porcupines

INGREDIENTS

  • 1 lb ground round or good hamburger meat
  • 3/4 cup rice
  • salt/pepper to taste
  • large can of tomato sauce
  • tomato paste

DIRECTIONS

Mix ground round and rice together. Add 1/4 cup water for moisture. Add salt/pepper. Make walnut size meatballs. In a large skillet put 1 TBS of vegetable oil. Fry each meatball turning each until they are completely brown. Mix tomato sauce and tomatoe paste together with one cup of water. Pour sauce mixture of porcupines turn heat to simmer- put lid on porcupines and let the porcupines simmer for 30/45 minutes until they are done. These meatballs are so tender. They are wonderful warmed up the next day for lunch.
