Poha

[Jacqueline adds: Poha is a western Indian dish that is made from flattened rice. It's usually served as a breakfast or snack food.]

Put a little bit of oil in the pan. Put mustard seeds and wait until they crackle. Add a little bit of channa dhal and urad dhal. Then immediately add green chilis and onions and saute. You may want to take it off the stove for a minute while you do this because the channa dhal and urad dhal burn easily. Also add a little bit of turmeric powder. Then you may add peas or boiled potato squares and salt. Finally add the poha which should have been soaked in water for about 10 minutes.

Do not over soak the poha, just kind of sprinkle the water to the point where each one is wet but not submerged. Then mix it all together until it is all very hot. Add cilantro or curry leaves for flavor. You may also add roasted cashews or peanuts. Many people add coconut but that is optional.
