I made this tonight and it was so good!
Heat oil in a pan over medium-high heat. Add onion and saute
until softened, 3-4 mintues. Add rice, stir to coat. Add chicken broth
and bring to a boil; reduce heat to low, cover and simmer until broth
is absorbed and rice is tender. (about 20 minutes) Remove from heat and
stir in parmesan cheese. Yummmmmm!
