Parmesan Rice

I made this tonight and it was so good!


  • 2 Tbsp olive oil
  • 1 onion, chopped
  • 2 Cups long-grain white rice (I used meduim grain since that is all I ever buy)
  • 1 qt. chicken broth
  • 3/4 Cup grated parmesan cheese
  • salt and pepper (I omitted this and just let each person salt and pepper their own)


Heat oil in a pan over medium-high heat. Add onion and saute until softened, 3-4 mintues. Add rice, stir to coat. Add chicken broth and bring to a boil; reduce heat to low, cover and simmer until broth is absorbed and rice is tender. (about 20 minutes) Remove from heat and stir in parmesan cheese. Yummmmmm!
