Myzithra Cheese & Browned Butter a la Homer

Here's a quick favorite from the Old Spaghetti Factory. Ok, neither low fat or particularly healthy, but a favorite with our family!
Makes 4 servings.

INGREDIENTS

  • 12 ounces pasta
  • 1 cup butter (no substitutions!)
  • 1 cup crumbled myzithra cheese (4 ounces)

DIRECTIONS

Cook pasta according to package directions. Drain and keep warm.

Cut each stick of butter into 8 pieces and place in a 2 qt sauce pan. Melt butter over med heat stirring constantly to prevent sediment from sticking to the bottom of the pan. As the butter cooks, it will start to foam and rise. Continue stirring. ONce the butter stops foaming and rising (about 5 min) cook until amber in color, 1 to 2 minutes more. The browned butter will have a pleasant carmel aroma. Remove from the heat and let the sediment settle to the bottom of the pan. Pur the clear brown butter through a strainer into a small bowl. Do not disturb the sediment in the bottom of the pan.

Divide cooked pasta into 4 servings. Spread 1/4 cup cheese over each serving. Top each with 1/4 cup browned butter. Serve immediately.

The browned butter can be stored in the refrigerator for several weeks and reheated in the microwave oven as needed.
