Mushroom-Baguette Stuffing

OK, this is a recipe I've been using since I got married. Mike really likes it.

INGREDIENTS

  • 1 lb chanterelles, shitake and criminis (You can use 3 types of any mushroom.)
  • 4 tbs unsalted butter
  • 2 shallots (diced)
  • 4 cloves of garlic
  • Salt and fresh ground pepper
  • 1 c finely chopped onion
  • 1 turkey or chicken liver diced
  • 4 cups of cubed baguette
  • 3 c milk (or as needed)
  • 1 tsp finely chopped thyme
  • 2 tbs chopped Italian parsley
  • 1 lightly beaten egg, if desired 
  • optional: golden raisins (I add some to sweeten and give texture to the stuffing.)

DIRECTIONS

Saute butter, garlic, shallots, onions and mushrooms until soft. (In that order!) 

Cook and dice liver, season with salt and pepper and add to mushrooms. 

In a large mixing bowl, combine bread cubes, and enough milk to saturate. Drain bread squeezing gently. 

Add herbs and mix again. If desired, add egg to bind stuffing. 

Bake in 350 degree oven for 30 minutes.
