Miss Bev's Apple Crisp

Here's the recipe I always use. A friend contributed it to a library fundraiser cookbook.

INGREDIENTS

  • Vegetable oil spray
  • 1.5 lbs. (5 medium) apples, cored, peeled and sliced
  • 2 T. lemon juice
  • 1/4 t. cinnamon
  • 2/3 c. flour
  • 1/2 c. firmly packed brown sugar
  • 1/2 c. uncooked oatmeal
  • 1/3 c. margarine

DIRECTIONS

Preheat oven to 375 degrees. Lightly spray 2-quart casserole dish with oil spray. Arrange apples in dish. Sprinkle with lemon juice and cinnamon. In medium bowl, combine flour, brown sugar and oatmeal. Cut in margarine with fork or pastry blender until mixture is crumbly. Spread over fruit. Bake 40 minutes, or until apples are tender.

Truthfully, I always make a "little extra" topping -- it's my favorite part!
