Matzoh Brie (Pancake-style)

To me, this is Jewish breakfast comfort food! When I was growing up, my family usually ate this with sour cream and sugar&cinnamon sprinkled on top. I've also heard of putting applesauce on top as the topping. Growing up in VT, I admit we even topped them w/ Vermont maple syrup!! But the best way is w/ sour cream and cinnamon sugar, I think.

INGREDIENTS

  • 2 whole matzoh
  • 2 eggs
  • pinch of salt
  • 2 tsp butter 
  • cold water
  • sour cream (optional topping)
  • sugar&cinnamon (optional topping)

DIRECTIONS

Break matzoh into bits and soak covered with cold water for 3 minutes, then squeeze out excess water. Add matzoh to beaten, seasoned egg. Heat butter then pour in mixture and pat down into pancake shape. Brown on both sides as you would regular pancakes. Top w/ your choice of toppings. Some even top w/  jam!
