Lee's Corn Chowder

This is one of our favorite soup recipes and very easy.

Melt 2 TBS butter(I substitute olive oil) . Saute 1 chopped red bell pepper, 1 chopped onion, and 3 cloves minced garlic for about 5 minutes.

Add 1 can diced tomatoes with juice. Finely chop 2 TBS canned chilpolte chilies (these can be hot, so adjust according to your heat preference). Add 2 cups water and 2 cans cream-style corn. Bring soup to boil and then reduce to simmer for 15 minutes.

Add 1 package (16 oz) frozen corn and 1 cup cream. Add 1 tsp dried oregano. Simmer 5 minutes. If you like shrimp, chop up some uncooked shrimp and add, cooking until the shrimp turns pink. Serve with chopped cilantro.
