King Ranch Chicken

I make this one a lot for others and everyone always asks for
the recipe. VERY easy and freezes really well so you can make ahead. I
always make an extra for my family at the same time. It is a meal in
itself but I usually send a salad and something sweet too.
Makes 6-8 servings
INGREDIENTS
- 2T butter
- 1 med onion, chopped
- 1 green bell pepper,chopped
- 1 red bell pepper, chopped
- 3 C chopped cooked chicken
- 1 (10 3/4 oz) can of cream of chicken soup
- 1 (10 3/4 oz) can of cream of mushroom soup
- 1 (10 oz) can of diced tomatoes and green chilies undrained
- 1 t chili powder
- 1 t ground cumin
- 2 C crushed tortilla chips
- 2 C (8 oz) shredded cheddar cheese
- Garnish: chopped fresh cilantro
DIRECTIONS
Melt butter in med skillet over med heat. Add chopped onion and bell
peppers. Saute 8 min or until tender. Stir in the chicken meat and next 5
ingredients. Place 1/2 of the tortilla chips in a lightly greased 13x9"
pan. Layer with 1/2 of the chicken mix and cheese. Repeat layering, ending
with cheese.
Bake uncovered @ 325 degrees for 45 min or until mixture is thoroughly
heated. Garnish if desired with cilantro.
