Jill's Squash Casserole

I love it [squash] grilled with olive oil, onions, bell pepper, and several shakes of steak seasoning. We also eat it roasted in the oven the same way. Sometimes I add cherry or grape tomatoes just to mix it up. When I get tired of it, I make a squash casserole:


1 1/2 cups of cooked squash
2 tbsp. flour
3 tbsp. sugar
1 1/2 cup of shredded cheese
1/4 cup of chopped onion
1/2 med. green bell pepper
2 slices of buttered bread
1/4 stick of butter
3 well beaten eggs
1 can of cream of mushroom soup
1 cup of crushed crackers

Cook squash until done and season with salt and pepper then drain excess liquid. Add all ingredients except 1/2 a cup of cheese and crackers and butter. Place in a 8 x 8 baking dish and bake at 350 degrees for 25 to 30 minutes. Then top with remaining cheese and crackers mixed with 1/4 stick of butter. Put back into oven for 10-15 minutes. Enjoy!


BTW- squash dressing is also YUMMY!!!
