Italian Pasta Medley

Here's a recipe from my Italian Grandmother (Grace). I actually have some made in my fridge and it's one of Grace's favorites.

INGREDIENTS

  • I medium onion, chopped
  • 2 cloves garlic, diced small
  • 4 fresh basil leaves, chopped
  • 6 zucchini, sliced about 1/4 inch thick and then sliced in half
  • 1 lb can diced tomatoes in juice
  • salt and peper to taste
  • 1lb macaroni, cooked

DIRECTIONS

Saute onions and garlic until translucent. Add basil and zucchini. Saute about 5-7 minutes. Add can of diced tomatoes, salt and peper. Simmer about 5 minutes. (Be careful not to over cook the zucchini or it will be too soft.) Serve as a side dish or pour over macaroni. Garnish with Italian cheese.

You could probably use fresh tomatoes, but would have to peel them first. You would put them in boiling water for about 2 minutes and then peel off the skins.
