Italian Pasta Medley
Here's a recipe from my Italian Grandmother (Grace). I actually have some made in my fridge and it's one of Grace's favorites.
Saute onions and garlic until translucent. Add basil and
zucchini. Saute about 5-7 minutes. Add can of diced tomatoes, salt and
peper. Simmer about 5 minutes. (Be careful not to over cook the
zucchini or it will be too soft.) Serve as a side dish or pour over
macaroni. Garnish with Italian cheese.
