Italian chili is always a huge hit in our house...serve with
garlic bread instead of cornbread....
1 lb Italian sausage, thoroughly cooked and drained
1 onion, sauteed
3 cloves of garlic, minced and sauteed
mix those with
2 cans of light kidney beans (drained)
2 cans of cannelini, or great northern beans, or white beans (drained)
2 cans of chickpeas, or garbanzo beans (drained)
1 large can of petite diced tomatoes
1 - 2 cans of tomato sauce
Italian seasoning to taste, a teeny tiny bit of chili powder
Simmer for an hour or more. Top with mozarella or parmesan.
