Indonesian Pork & Noodles

Here's a recipe I just fixed tonight. It's an Indonesian stir fry, basically. My college roommate grew up there and she fixed this a lot. It's yummy. It sounds like more work than it really is -- I had it on the table in 30 minutes tonight.

Bakmi Goreng (Fried Noodles):

INGREDIENTS

  • 1/2 lb. Mie or fine egg noodles (I've also used angel hair pasta)
  • 2 eggs, beaten
  • 1/4 c. oil
  • 1 lb. pork, in bite-size pieces
  • 1 1/2 c. chopped onion
  • 2 minced garlic cloves
  • 2 tsp. ginger
  • 1/4 c. chopped scallions
  • 2 T. soy sauce
  • 1/2 tsp. pepper
  • (optional) 1 c. diced, cooked shrimp
  • 1 c. shredded cabbage
  • 1 c. bean sprouts (I usually leave this out bc we're not into them -- just add more cabbage instead)

DIRECTIONS

Cook noodles (2-3 minutes in boiling water). Drain and cool. Make omelette of eggs, roll and slice fine. Heat 2 T. oil in skillet or wok. Saute pork 5 mins. Remove, keep warm.

Heat 2 more T. oil, saute onions, garlic, ginger 3 mins. Add cabbage, sprouts, shrimp; cook 2 mins. Add pork, scallions, pepper, egg, cook 2 mins. Add noodles and cook till hot. Serve with soy sauce.
