Indonesian Pork & Noodles

Here's a recipe I just fixed tonight. It's an Indonesian stir
fry, basically. My college roommate grew up there and she fixed this a
lot. It's yummy. It sounds like more work than it really is -- I had it
on the table in 30 minutes tonight.
Bakmi Goreng (Fried Noodles):
INGREDIENTS
- 1/2 lb. Mie or fine egg noodles (I've also used angel hair pasta)
- 2 eggs, beaten
- 1/4 c. oil
- 1 lb. pork, in bite-size pieces
- 1 1/2 c. chopped onion
- 2 minced garlic cloves
- 2 tsp. ginger
- 1/4 c. chopped scallions
- 2 T. soy sauce
- 1/2 tsp. pepper
- (optional) 1 c. diced, cooked shrimp
- 1 c. shredded cabbage
- 1 c. bean sprouts (I usually leave this out bc we're not into them -- just add more cabbage instead)
DIRECTIONS
Cook noodles (2-3 minutes in boiling water). Drain and cool.
Make omelette of eggs, roll and slice fine. Heat 2 T. oil in skillet or
wok. Saute pork 5 mins. Remove, keep warm.
Heat 2 more T. oil, saute onions, garlic, ginger 3 mins. Add cabbage,
sprouts, shrimp; cook 2 mins. Add pork, scallions, pepper, egg, cook 2
mins. Add noodles and cook till hot. Serve with soy sauce.
