Herman's Oatmeal Cookies

I thought I was in paradise when I tried Herman's delicious
oatmeal cookies. He brought them into work and we were all very
grateful. It is a family signature recipe of his, he tells me. He
sandwiches vanilla frosting between them. Very yummy!!
INGREDIENTS
- 1/2 cup butter
- 1/2 cup shortening
- 2 cups packed brown sugar
- 2 cups plain flour
- 2 eggs
- 2 tsp. soda
- 2 tsp. cinnamon
- 2 cups uncooked Quick Oatmeal
- 1 tsp vanilla
- 1/2 tsp salt
DIRECTIONS
Cream shortening and butter together on low, then beat in eggs.
Add all dry ingredients. Cover and chill for at least 1 hour in frig.
Pinch off small amounts and roll into balls and place on slightly
greased cookie sheet. Bake @ 350 for 10 minutes. Add filling
when cool.
Cream filling - use vanilla cake icing.
