Gluten-Free Chocolate Brownie Cookies

I just made these gluten-free cookies last week and they are super yummy....very rich though so you only need one or two to satisfy a chocolate craving.

INGREDIENTS

  • 3/4 cup butter, cubed
  • 4 1 oz. squares unsweetened chocolate
  • 2 cups sugar
  • 4 eggs
  • 1 cup gluten free flour mix
  • 1/4 cup almond flour
  • 1/4 cup sweet rice flour
  • 1/2 cup cocoa
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 tsp. zanthan gum
  • 1 1/2 cups semisweet chocolate chips

DIRECTIONS

In small bowl in microwave, melt butter and unsweetened chocolate, cool.

Transfer into large mixing bowl; add sugar & eggs. Beat until smooth.

In small bowl combine the flours, cocoa, baking powder, salt & xanthan gum. Add flour mixture to chocolate mixture. Beat until smooth. Mix in the chocolate chips by hand.

Cover and refrigerate for 2 hours.

Drop by tablespoon onto greased baking sheets and bake at 350 for 8 - 10 minutes or until edges are set and tops are slightly cracked. Cool for 2 minutes before removing from pan.

If desired you can make a glaze with 1/2 cup of chocolate chips and 2 tsp. of shortening. Melt in small dish in microwave and drizzle on top of cooled cookies.
