Frozen Pickles

I just finished a big batch of freezer pickles. I have been making these for several years. They are super easy and yummy!
Thought I would share the recipe for anyone interested. You can use any type of cucumber you like. I just did a half a bushel the yesterday, and I bought pickling cucumbers, they are smaller than a regular cucumber. I bought them just because I like the size of them. Last year I used the regular cucumbers.

INGREDIENTS

  • 1 lb sliced cucumbers (1 quart)
  • 2 Cups thinly sliced onions (I dice mine)
  • 1 Tbsp salt
  • 3Tbsp water
  • 1/2 Cup Cider Vinegar (do not use white vinegar)
  • I Cup Sugar

DIRECTIONS

Combine: water, salt, onions and cucumbers. Let stand at room temperature for 2 hours
Add sugar and vinegar. Stir until dissolved.
Pack lightly into 2- one quart containers.
Cover and freeze overnight or up to six weeks.

Note: You can freeze them for much longer than six weeks. I make enough to last about a year with no problems. We are just now using up the last of what I made last year.

I do not use freezer containers to freeze them in. I freeze them in ziptop freezer bags. They freeze flat and saves me freezer space.
