Cut everything mentioned real small for best flavor.

In a wok, add 3-4 tbsp of olive oil, simmer with 1 tbsp of ginger (I use more) and 1 tbsp of garlic powder.

Add diced 1 green and 1 red peppers and ham cubes and saute. The flavor will be in these ingredients so you want to use a lot of it.

Add bag of frozen mixed veggies, stir till unfrozen, add 1 bunch of chopped green onions, a ton of pepper (to spice it up), and add rice (I use a whole bag and cook it the night before.)

Stir stir stir. The rice is better if used the next day so it's on the dry side.

Add 6-8 already scrambled eggs, stir stir stir.

Serve.

The ratio is about half rice, half the rest of the ingredients. It freezes great, and you just toss it in the wok after thawed to reheat.

My husband begs for this!!!
