4 Bean Enchiladas
This is a favorite in our home with all 10 of us!
4 cans of different beans (kidney, pinto, black, cannelli etc)
flour or corn tortillas
1 large can of enchilada sauce
1 can of cheese soup (nacho, pepperjack etc)
drain and rinse the cans of beans
mix with cheese soup
heat tortillas in microwave for easier handling
spoon mixture into tortillas and wrap up
pour a small amount of enchilada sauce on bottom of baking dish
place enchiladas in dish
cover with rest of enchilada sauce and shredded cheese as desired.
back, covered at 350 for approx. 30 minutes, take off foil the last 10
