Eggplant Parmesan Soup

We tried a new soup recipe that a friend gave me and my
children loved it.
It is called Eggplant Parmesan Soup, but my daughter calls it Lasagna
soup
1 lb ground beef
1 medium onion, chopped
1 clove garlic
1 lb eggplant (peeled and diced)
3/4 cup sliced carrot
3/4 cup sliced celery
2 cans Italian diced tomatoes
2 cans beef broth
1 tsp sugar
1/2 tsp ground nutmeg
1/2 tsp pepper
1/2 cup orzo (or other small pasta)
grated parmesan or mozzarella to garnish
Cook onion, beef and garlic. Drain grease. Add eggplant, carrots,
celery and tomatoes. Saute for a couple of minutes. Pour in beef broth.
Mix sugar, nutmeg, pepper. Cook until heated through
Mix dry orzo into the soup and cook about 12 minutes until orzo is
tender.
Serve into bowls and top with cheese.
(I used regular diced tomatoes and added italian seasonings)
The children loved it and didn't believe me when I told them that they
had been eating eggplant. It is even better the next day. My 7 and 5
year old asked for it in their lunch box!!
