Easy Chili

A great and very EASY chili we like to make is:
2 cans of black beans, drained
2 cans of red/kidney beans, drained
1 cup mild, fresh chunky salsa
1 TB minced garlic (from the jar--it's supposed to be easy, right?)
1 TB of lime juice
2 TB chili powder
Salt, pepper, and garlic salt/powder to taste.
Combine all of the ingredients together over the stove. I like to mash
the black beans just a bit before adding the other ingredients.
*Optional: Add diced cooked chicken, shredded pork (we love our crock
pot and the Hormel pork loins), or ground beef. A lot of times we'll
use left over meat, or cook two portions the day before and save one
for this dish. It's also really filling as a veggie meal.
Heat ingredients thoroughly and serve with any or all of the following
toppings:
*Sour Cream
*Shredded Cheese
*Fresh tomatoes or more chunky salsa
*Chopped or diced avocado
*Olives
*Jalapenos (not as kid friendly, but DH loves them)
*Onions
*Crushed tortilla chips
It's great with cornbread, or as a topping for a baked potato or
nachos, served with tortillas, or even with hearty brown rice. It's
prepped and cooked in no time, and is usually a crowd pleaser!
