Easy Black Bean Soup

1 cup salsa
2 - 15.5oz cans black beans (drained and rinsed)
2 cups chicken broth
Garnish: (you can pick and choose garnishes)
Sour Cream
Salsa
Cilantro
Lime Juice
Sherry (a dash of sherry tastes great in the soup and reduces the
pastey-ness (sp?) of the beans)
Green Onions
Radishes Chopped
Shredded Cheese
Heat Salsa in sauce pan for 5 minutes, add beans and broth ... bring to
a boil and let it simmer for about 15 minutes. Cool slightly and puree
3/4 of mixture in blender. *I usually puree full batch because I like
my soup smooth* Return to soup pot and heat through.
Place garishes on table so people can add what they want. With this
variety soup can take on many different flavors. Serve with crusty
bread and salad.
Mmmmm ... all these recipes look so good. Looks like I will be adding
to my shopping list this week.
