Double Chocolate Mint Cookies

INGREDIENTS

  • 2/3 c. butter, softened
  • 1 c. sugar
  • 1 egg
  • 1 t. vanilla extract
  • 1c. flour
  • 1/2 c. cocoa powder
  • 1/2 t. baking soda
  • 1/4 t. salt
  • 1 10oz. package Hershey's mint chocolate chips(or the new chocolate/mint swirled chips)

DIRECTIONS

-Heat oven to 350.
-Beat butter and sugar till creamy.
-add egg and vanilla and beat well.
-Sift together flour, cocoa, baking soda and salt.
-Gradually add dry ingredients to butter mixture till incorporated.
-Stir in chips.
-Drop well-rounded teaspoons onto silpat-lined baking sheets.
-spray bottom of glass with cooking spray and dip into sugar(I use large sugar crystals for extra crunch).
-Press sugar coated glass onto each mound, flattening a bit(repeat sugar coating after each cookie).
-Bake about 10 minutes, till set.
-Cool slightly before removing from baking sheet.
-Cool on rack and try not to eat them all.
-Makes about 2 1/2 dozen cookies.
