Diced Root Vegetables with Rosemary
Seth does not like carrots, cooked or raw, but will gobble up these sweet potatoes. Enjoy! ~Jen
Dice vegetables. Heat large frying pan to medium high heat. Add olive oil and diced vegetables. Add salt to taste. Stir occasionally while you are preparing the chicken. After 10-15 minutes add rosemary and a little bit more salt if necessary. Not sure how long they will need to cook 'cause I have never written down this recipe before, but if you need them to cook faster, you can cover the pan with a tight-fitting lid for 3-5 minutes toward the end of cooking time after you've added the rosemary.
