Creamy Chicken & Rice

Here's a creamy chicken and rice recipe we had the other night:

INGREDIENTS

  • 2 cans lowfat cream of chicken soup
  • 1 1/2 cups water
  • 3/4 cup uncooked rice
  • 1 teaspoon sage
  • 1 teaspoon thyme
  • 1 teaspoon dried parsley
  • 3 carrots, thickly sliced
  • 1 onion, chopped
  • 1 stalk celery, sliced
  • 2 lbs chicken thighs (I like to cut the meat from the bones before adding to the pot)

DIRECTIONS

Mix soup, water, rice, spices, and veggies in a 3 qt slow cooker. Add chicken and toss to coat.

Cover and cook on low 7-8 hours or until done.
