Corn Chowder

Okay, here is another one. Not as healthy as the Tortellini Soup but really satisfying:

INGREDIENTS

  • 2 cans creamed corn
  • 2 cans water
  • 4 slices bacon
  • 4oz. can of mild green chilis
  • Salt and Pepper to taste
  • 1 pint half-n-half
  • 10 baby red potatoes
  • 1 small onion

DIRECTIONS

Chop vegetables. Brown and crumble bacon. Put into soup pot with corn, water, and chilis. Salt and Pepper to taste. Cook until onions are clear.

Add the half-n-half right before serving. Once added do not let soup boil or the half-n-half will cause it to curdle.
