Chocolate Eclair 'Cake'
This has more of a thick layered pudding consistency more than
a traditional cake. The 'cake' part are the layers of graham crackers.
This is very, very tasty!
- 2 (3 oz) packages instant vanilla pudding
- 3 C. milk
- 8 oz. Cool Whip
- 1 box graham crackers (regular flavor if you can find)
- 1/3 c. cocoa
- 1 C. sugar
- 1 stick butter
- 1/4 C. evaporated milk
- 1 tsp. vanilla
Mix pudding with milk until thick. Fold in Cool Whip. Line pan
with graham crackers. Pour a layer of pudding, then layer more
crackers. Repeat. End with pudding on top. (should be 3 layers.)
Put butter, sugar, cocoa, and evaporated milk in saucepan. Heat until
sugar is melted. Remove from heat. Add vanilla. Pour on pudding. Chill.

~~The Cool Whip needs to thaw before using. You can just put in refrigerator or leave out for a couple of hours.~~
