Chicken Poppyseed Casserole

This is one of my two very favorite chicken recipes! [J adds: 'The other is Parmesan Chicken.']


  • 3 large chicken breasts (J's note: You can make it even easier! Substitute a cooked rotisserie chicken and skip the cooking step.)
  • (2) 10 1/2 oz. cans of cream of chicken soup
  • 1 pint sour cream
  • 1 sleeve of Ritz crackers
  • 1 stick butter/margarine
  • 2 tsp. poppyseeds (optional)


Cook chicken; cut into small pieces and arrange in buttered 13x9 casserole dish. Mix soup with sour cream an dpour over chicken. Crush crackers and mix with poppyseeds. Sprinkle over chicken. Pour melted butter evenly over other ingredients. Bake at 350 degrees for 20-30 min.
