Chicken on a Stick

This recipe is a big hit with my children so I make it a lot
during the summer. And it's a light (97 calories, 4 g fat per serving)
and EASY which makes it even better.
INGREDIENTS
- 2T canola oil
- 2T lemon juice
- 2T reduced-sodium soy sauce
- 4 garlic cloves, minced
- 2t honey
- 1t ground cumin
- 1t ground coriander
- 1/2t ground ginger
- 3/4 lb boneless, skinless chicken breasts, cut into thin strips
DIRECTIONS
In a bowl, combine the oil, lemon juice, soy sauce, garlic,
honey and seasoning;mix well. Pour 1/4 cup marinade into a large
resealable plastic bag; add the chicken. Seal bag and turn to coat;
refrigerate for at least 3-4 hours. Cover and refrigerate remaining
marinade.
Coat grill rack with nonstick cooking spray before starting the grill.
Drain and discarde marinade from chicken. On metal or soaked wooden
skewers, thread chicken. Grill, uncovered, over med-hot heat for 3-4
minutes on each side or until chicken juices run clear, basting
frequently with reserved marinade and turning once. Yield: 6 servings
