Chicken-Broccoli

This is one of my all-time favorite recipes - mainly because I can make it once and have four dinners done!
Serves 4 people, 4 times.
INGREDIENTS
- 1 cup butter (or margarine)
- 2 lbs broccoli, cut up or frozen chopped)
- 1 cup flour
- 8 cups milk (I save money by using reconstituted dry milk)
- 4 cups cooked chicken, cut up
- 2 lbs cheese, grated (I use Swiss, but any kind will do)
- salt and pepper to taste
DIRECTIONS
Make a white sauce by melting the butter in a pan. Add the
flour, stirring constantly. When it reaches the boiling point, slowly
add the milk, mixing constantly with a wire whisk. Once it has started
to thicken, remove from heat. Layer one cup of chicken and 1/2 lbs of
broccoli into 4 - 8x8 baking pans. In each pan, sprinkle 1/2 pound of
cheese and top with 2 cups of the cream sauce. Cover pans with foil and
freeze. *
To serve: Thaw. Bake at 350 degrees for 30 minutes. Or you can pour
into a pan and heat on the stove top. Serve over cooked rice, pasta,
potatoes, toast, whatever!
*NOTE: You can also just combine the ingredients and freeze in a
ziplock bag or any plastic container. If you are freezing in something
other than layered in a baking pan, you might want to leave out the
cheese - put it in a ziplock and tape to the rest of the dish in the
freezer to be added towards the end of the cooking.
The recipe says that it serves a family of four, but we can still feed
a little more than that right now. When one doesn't cut it anymore,
it's easy enough to make three or two meals instead of four!
