Boneless chicken - as many pieces as you'd like - say 6 or 7 tenderloins
2 - 3 cans of diced tomatoes (I use one Rotel for spicyness)
1-2 cans of artichoke pieces, drained
Let cook in crockpot for 4 hrs or so.
(You can also precook/boil chicken then put in sauce pan and cook on stove)
Make noodles, and serve over noodles. (mozzarella cheese on top - yum!)
I take a pan, put noodles on the bottom, pour chicken pieces (broken up) and tomato/artichoke sauce over noodles and freeze.
When you are ready for it, take out, thaw, add a little spaghetti sauce
to top (if you want it or leave as is,) add mozzarella cheese to the
top and bake covered for 30 minutes, uncovered to brown cheese.
It's soooo good and easy! - my DH loves loves loves it.
