Chicken Almond

Always a favorite for my birthday dinner when I was growing up.

INGREDIENTS

  • 1 whole fryer, cut up
  • 1 can cream of mushroom soup]
  • 1 can of cream of celery soup
  • 3/4 cup dry white wine (I use the cheap 2 Buck Chuck at Trader Joe's)
  • 1 cup sharp cheddar cheese (the sharper the better)
  • 1/2 cup sliced almonds

DIRECTIONS

Place chicken pieces in a 9X13 pan. Mix the remainder of ingredients, except the almonds, and spread over the chicken. Loosely place foil over pan and bake at around 275 or 300 degrees for 2.5 hours. Remove foil, sprinkle almonds over the chicken and bake for an additional 30 minutes. Serve over rice and the left over sauce is great for a gravy.

Sometimes if I'm short on time, I up the oven to 350 and cook for 1.5 hours and it comes out just fine-- the sauce is enough to keep the chicken very moist.
