Cherry Delight

Candace is another family w/ our adoption agency. She wrote:

The Cherry Delight is my mom's recipe and I think has been passed down from her mom....I've never seen them in a cookbook.
Cherry Delight
Crust:
1 box graham cracker crumbs
1 stick butter
1 tbsp sugar
Mix graham cracker crumbs and sugar together. Melt butter and add to graham cracker mixture. Press into bottom and up sides of a 9x13 inch pan. Bake at 350 for 5 minutes and then refrigerate.
Topping:
16 oz. cool whip
8 oz. cream cheese
2 cans cherry pie filling
1 can condensed milk
1 tsp almond extract
1 tbsp sugar
1 cup chopped pecans (optional)
Mix softened cream cheese and condensed milk with mixer. Fold in thawed cool whip until well combined. Put the cherries into the food process and blend with sugar and almond extract (cherries can be left whole, but I prefer them chopped up). Spread cream cheese mixture over prepared crust, then spread cherries over the cream cheese mixture. Sprinkle pecans on top. Cover and refrigerate for 1 – 2 hours.
