Cheesy Chicken Vegetable Soup

Soup is also really popular at my house. I'm anxious to make a couple of the recipes that have been posted. ;-) Here is another one to check out.


  • 4 boneless skinless chicken breast
  • 3/4 c chopped onion
  • 8 c water
  • 1 c diced celery
  • 2 tsp salt
  • 4 chicken boullion cubes
  • 1 tsp pepper
  • 1 lb Mexican Velveeta cheese
  • 1 1/2 c diced carrots
  • 2 c diced potatoes
  • 3 c cooked rice (can use minute rice)


Cook the chicken in the 8 c of water for approximately 30 minutes. Remove the chicken and cut into bit size pieces. Add the diced chicken and all other ingredients except the cheese to the water and cook for 45 minutes. After the vegetables and potatoes are tender add the cheese. Stir occassionally until cheese is melted. Once cheese is added do not allow the soup to boil.
