Casey's Mac-N-Cheese

Here is my recipe for Mac-N-Cheese (warning, it is VERY rich!):


  • 1/2 c butter
  • 1/2 c flour
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/4 tsp ground red pepper
  • 1/2 tsp granulated garlic
  • 2 c half-n-half
  • 2 c milk
  • 2- 10 oz blocks sharp cheddar cheese, shredded
  • 1- 10 oz blocl extra sharp cheddar, shredded
  • 1- 16 oz package elbow macaroni, cooked


Melt butter in large skillet over med heat. Gradually whisk in flour until smooth, cook, whisking constantly for 2 minutes. Stir in salt, peppers, garlic powder. Gradually whisk in h-n-h and milk, cook, whisking constantly for 8-10 minutes (or until thickened). Stir in half of sharp cheese, stir in all of xtra sharp cheese. Remove from heat and combine w/ pasta. Pour into lightly greased 9x13 dish, sprinkle w/remaining cheese. Bake @ 350 for 20 minutes (15 minutes longer for crusty top).
