Bren's Sweet Potatoes

I don't know the measurements. I guess on things when I cook...

Okay, this is how I make mine. I peel and cut them into large chunks then boil them in water (maybe 3/4 of the way up the pan but not usually covering all the yams). I add a cup or two of packed brown sugar (it depends on how many yams I'm making), half as much white sugar as brown sugar, some vanilla extract (maybe a few teaspoons?), cinnamon & nutmeg (to taste. I always use less at first because you can add more in the end). I also add usually one stick of "butter" (I use margarine because we don't use real butter). Bring it all to a boil and then simmer for 30+ mins (the liquid will began to get a bit thick). I then put all the yams in a baking dish. If we are going somewhere (I always bring the yams) I'll just cover and put them in the fridge to bake them later at who's ever house we are going to. After they are in the baking dish I'll sprinkle more brown sugar, flour, oatmeal (like a crumble mix) on top and bake at 350ish for about 25-30 mins. Oh, put a baking sheet under the dish because it will boil over a bit. I don't like marshmallows on mine but you can put them on for the last few minutes if you want.
