Bean & Corn Salad

This is a side dish, but my 6 year old gobbles it up and eats it as her main dish. Great for mexican dishes, grilled meats, etc. Dressing: I don't have exact measurements. I have made it for so many years that I just eyeball everything.

INGREDIENTS

  • 1 can black beans drained and rinsed
  • 1 can corn
  • 1/2 onion chopped
  • 1/2 bell pepper
  • avocado diced 
  • Dressing ingredients below:
  • Olive Oil
  • Balsamic Vinegar
  • Coriander
  • Cumin
  • Chipolte Pepper(1-chopped)This adds some heat, so you can omit
  • Cilantro

DIRECTIONS

Mix dressing together-add bean/corn mixture. Toss and Serve.
